Cucumber and Mango Salad

This salad came about by chance, the it came about ingredients I only had at the time and the result was succulent, light and tropical. Apart from the fact that the dressing has no oil, it is a very healthy version. Do not be afraid to experiment and trust me,  you’ll be surprised!
It is a very good choice for Raw Vegans.


Ingredientes                                                                                                4-5 servings

  •  4 long seedless cucumbers.
  • 2 large ripe mango.
  • 10 fresh basil leaves.
  • 1 lime.
  • 1 clove of garlic.
  • Salt and pepper to taste.

Directions
Peel cucumbers and cut in half (lengthwise), remove the middle or the seeds with a spoon, then chop into slices and place in a salad bowl. Peel one mango, cut into squares and cut the basil leaves into strips, then add everything to the bowl. To make the dressing blend lemon juice, garlic (previously crushed), the second mango, salt and pepper and mix into salad bowl. You may add more lemon to taste.
This salad can be prepared ahead of time and be left in the fridge overnight and will end up much richer.
