Watermelon and feta cheese salad

This salad is perfect for hot summer days. This combination is super juicy, refreshing and elegant.


Ingredients                                                                                                5-6 servings

  • 1 medium watermelon chopped into cubes.
  • A block of feta cheese chopped into smaller cubes than the watermelon.
  • 7 oz of Arugula ( could be replaced by watercress )
  • 2 lemons
  • 3 tbsp Olive oil (optional)
  • Salt and pepper to taste.

 

Directions
Preferably cool the watermelon before cutting.
In a salad bowl, mix all the chopped ingredients with the dressing.
The dressing is just lemon juice, salt and pepper. Can be made without the oil, which makes it healthier and equally delicious and fresh.
